Service Description
In this class, you will learn to assemble, fill, and cook tamales from scratch. We will make Chicken Aji Amarillo Cream Sauce & Olive Tamale, a Peruvian inspired tamale. The class is naturally gluten-free and can be vegetarian/vegan (upon request). The class is led by Jorge Alberto Coronado, the Owner and Operator for Coronado Commissary. His tamale adventure began over a decade ago in an argument with his mother Georgette. She came home with a batch of tamales made from an annual pop-up tamaleria with some of her friends. Alberto didn't care much for the taste of the tamales and the petulant attitude of a middle schooler kicked in. "If you don't like them, then make some yourself." His mother said with a calm and clever smile knowing good & well the boy knew little of the effort it took to make a tamale. Over the next decade, Alberto did all he could to learn more about the corn husk-wrapped treats. Inspiration struck Alberto with the breakfast tamales of Jiutepec. These tamales were bursting with flavor and didn't dry out as the day went on. The leaves they were wrapped in held quite a secret. These banana leaves have become a signature of Coronado Commissary, which we will be making in the class.
